Process for the preparation of amorphous alumino- and/or ferrosodium phosphates of formula: Na1-xKxAl3-yFeyH14(PO4)8.zH2O where x has a value from 0.1 to 0.2 (preferably 0.15), y has a value 0.3, and z has a value from 3 to 5 (preferably equal to 4 + 0.4), by atomisation (spraying) of a cold aqueous precursor solution, the temperature of the gases at the inlet of the atomisation (spraying) device being from 250 to 550 DEG C and that of the desired product at the outlet of the said device being from 100 to 120 DEG C. Application of the phosphates obtained in the food industry, especially as constituents of delayed-rising powders.
