PURPOSE:To obtain vegetables enriched with iron, calcium and/or zinc contents by sowing seeds of the vegetables in an aqueous solution or culture solution containing iron ions, calcium ions and/or zinc ions and cultivating the seeds or the seedlings of the vegetables in the aforementioned aqueous solution or culture solution. CONSTITUTION:Any of normal iron salts of organic acids and inorganic iron compounds may be used as a compound added to an aqueous solution or culture solution for producing iron ions. Any of calcium salts of organic acids and inorganic calcium compounds may be used as a compound for producing calcium ions. Any of zinc salts of organic acids and inorganic zinc compounds may be used as a compound for producing zinc ions. In producing metal-enriched bean sprouts, dipping of seeds in water and/or germinated seeds thereof in water is carried out according to a normal cultivation method. In the process, the aforementioned aqueous solution or culture solution containing the above- mentioned iron ions, calcium ions and/or zinc ions is used to perform the dipping in water. Thereby, the objective bean sprouts enriched with the metallic contents can be produced.
