GLUCOSYLATION PROCESS USING SUCROSE GLUCOSYL TRANSFERASE

PURPOSE:To enable the highly efficient and selective glucosylation of aldose, by using a sucrose glucosyl transferase in the glucosylation with a specific glucosyl donor and a receptor. CONSTITUTION:Sucrose glucosyl transferase is used in the glucosylation process using a 6'-substituted sucrose derivative (e.g. 6'-halogenated sucrose, 6'-deoxysucrose, etc.) as a glucosyl donor, and an alcohol having a franoside structure (e.g. pentofranoside, hexofuranoside, tetrahydrofuran derivative, etc.) as a receptor.
