PURPOSE:To obtain a solid powder for the title processed foods and additives, by diluting amino acids and decomposition products of ribonucleic acids of MISO and soy sauce by fermentation of addition of high-order KOJI mold containing salt with a solvent, dialyzing with an electrolytic permeable membrane, subjecting to electrophoresis and then freeze-drying. CONSTITUTION:Soybeans, etc., boiled with water are successively transferred from a tank 1 to fermentation tanks 2-n, blended with salt and KOJI mold, fermented in high order, the final fermented product is diluted with a solvent, put in permeable membranes 6', 7' and 8', the solution is dialyzed and desalted in an aqueous solution 10' in a water tank 9 and further electrically dialyzed by an electrical dialyzer 11'. The solution is dehydrated by a centrifugal separator 14', sent through a freezer 15', dried under reduced pressure by a vacuum dryer 16' and solid powder of amino acid mixture is preserved by a vacuum tank 17 '.
