PURPOSE:To concentrate and separate a lower alcohol ester of a highly unsaturated fatty acid, by selectively hydrolyzing and removing the other fatty acid lower alcohol esters with lipase. CONSTITUTION:An ester mixture containing lower alcohol ester of a highly unsaturated fatty acid having =20 carbon atoms and =3 double bonds and other fatty acid alcohol esters and obtained by the ester-exchange of various animal and vegetable oils with lower alcohol in the presence of a catalyst, is treated with lipase to effect the selective hydrolysis of only the other fatty acid lower alcohol esters, and the decomposed fatty acids are removed by conventional method to obtain the highly unsaturated fatty acid ester in high concentration.
