PURPOSE:To separate the small pieces of fish bones, solid component of fish proteins, and liquid fish oil from each other, by cutting, crushing and/or grinding a fish body, etc., decomposing the protein, filtering the product, and coagulating the protein in the filtrate. CONSTITUTION:A fish body or its processed residue is cut, crushed and/or ground, and is mixed with a protein-decomposing enzyme and/or microorganism for about 20min-2hr. The obtained slurry product is filtered to separate and remove the fine pieces of fish bones. The filtrate is mixed with a protein-coagulating material (e.g. histone, chitosan, etc.), and the coagulated protein is separated as a solid component e.g. by a press. The fish oil is separated from the remaining part of the filtrate e.g. by a centrifugal separator. The fish oil can be used as an edible oil or fat by hydrogenation.
