PURPOSE:To improve operation efficiency by mechanically carrying out separation of joint of thighbone and lower leg bone, stripping of thighbone and separation between lower leg bone and foot joint. CONSTITUTION:A stand 6 fixing bone-attached dark meat 1 incised along the inside of thighbone and lower leg bone with a fixing member 13 is moved and bone 3 projected from the front edge of stand 6 is brought into contact with a joint-removing hook 17 and the bone 3 is pressed in horizontal direction and the joint between bone 3 and bone 4 is removed. A hook 21 of folding mechanism 18 is rotated and the bone 3 is folded under the stand 6 and the upper part 3a of bone 3 is exposed from dark meat part 2. Then the outside 25b of arc arm 25 is brought into contact with a contact member 26 and the arm 25 is turned in the direction of the arrow A against pressure of pulling spring 28 to fixed the bone 3. Then the second slide block 31 is slided below and engage hook 33 in the lower end of oscillation arm 32 is engaged with the upper part 3a of the bone 3 and the arm 32 is moved in the direction of the arrow B and dark meat part 2 is stripped from the bone 3.
