In prepn. of sugar-free foods and luxury goods, a mixt. of the isomers alpha-d-glycopyranosil-1,6-d-glucidal (I) and alpha-d-glucopyrandosil-d-mannitol (II) is added to the basic substances, as sweetener. The sweetener is pref. produced from saccharose by fermentation with transglucosidases, produced by Protoaminobacter rubrum. A sugar-free chocolate is prepd. from 7 pts. wt. of butter concentrate, 6 pts. of Ca caseinate, 30 pts. of cocoa butter, and 100 pts. of a mixt. of equal wts. of (I) and (II). This mixt. is used for chocolate specialities, e.g. sweets.
