The following are claimed: (A) DNA sequences of 1358 base pairs, as shown in the specification, which comprise at least part of a gene coding for stearoyl-ACP-desaturase (SAD) and are present in a plant of the family Cruciferae; (B) expression cassettes contg. such sequences, and expression vectors contg. such cassettes; (C) modification of lipid biosynthesis in plants by introducing such expression cassettes, and the plants thus obtained; (D) cocoa butter equivalents or their components, isolated from such plants, and foodstuffs contg. such prods.; (E) the use of the DNA sequences as probes or for prodn. of SAD. The gene coding for delta-9-desaturase has been identified in an oilseed rape cDNA library and has been sequenced.
