The process for packaging and preservation with endothermic microwave bacterial inactivation (pasteurisation/sterilisation) comprises exposing the flexible plastics packaging (bags/trays) containing the food product under high vacuum to irradiation with very high radiofrequency waves (2450 MHz) which as a result of the Joule effect produce heat directly in the cells of the product contained in the packaging, which reach the lethal temperature in a very short time, the microorganisms being very much smaller than the cells of the product, without the product being raised to the same temperature. The heat treatment time is 5 to 20 times shorter than that for conventional systems, with the difference that the microorganisms are destroyed, not that their reproduction is inhibited. The product preserved in this way can be kept at ambient temperature for an indefinite period. Packages which are flexible after cooling are placed in cardboard boxes for protection from the light and to ease handling. The invention has immediate and extensive application in all branches of the food, pharmaceutical, herbal and similar industries.
