ABSTRACT OF THE DISCLOSUREDNA strand having an ability in biotechnologicalproduction of .alpha.-acetolactate decarboxylase is disclosed.The DNA strand is characterized in that it has anucleotide sequence coding for a polypeptide whose aminoacid sequence is substantially from A to B of Fig. 1 andwhich has .alpha.-acetolactate decarboxcylase activity. Alsodisclosed is a yeast which belongs to Saccharomycescerevisiae and which has been transformed by the DNAstrand. The yeast is characterized by the fact that its.alpha.-acetolactate producing ability is reduced, and willthus produce an alcoholic liquor such as beer whichcontains no or little diacetyls which have come fromtheir precursor, namely .alpha.-acetolactate.
