A compsn. for cleaning contaminated fruit and vegetables consists of neutralised fatty acids, citrate, EtOH and opt. phosphate and/or ethylenediaminetetraethanoic acid (EDTA), all components being acceptable components of foodstuffs. USE/ADVANTAGE - The mixt. can be used to wash fruit and vegetables which have been directly or indirectly contaminated by e.g. pesticides, fungicides and herbicides used in cultivation or heavy metals such as Cd, Hg and Pb from air, soil or water. The mixt. can be used at low temps., does not change the taste or appearance of the prods. does not cause nutrients to leach out and is completely acceptable for use with foodstuffs. It is suitable for both domestic and industrial use.
