In a process for prodn. of smoked sausage or ham, pieces of chopped meat are smoked before they are introduced into an air impermeable skin. Smoking occurs under pressure at low temp.. Appts. for the process comprises a smoke generator (1) connected by a tube (2) to a mixing drum (3) which can be evacuated and subjected to pressures above atmospheric. A compressor (4) and filter (5) are located in the pipe (2). Low temp. processing is achieved by placing the mixing drum (3) in a cooling chamber. USE/ADVANTAGE - The process and appts. are used for smoking sausage or ham, achieve a longer life prod. and are environmentally friendly.
