In the treatment of freshly-caught fish, a stock is prepd. from the parts of the fish removed during filleting, and during further processing of the deep-frozen fish (slicing, packing, etc.), the fish is kept below freezing pt. and is sprayed with a liq. contg. this stock so that its surface becomes completely covered with a layer of the stock material. The fish is pref. initially deep-frozen to at least -20 deg.C (pref. -40 deg.C) and the temp. during processing is kept below -7 deg.C. The stock is prepd. by intensively agitating the fish offal with hot water to produce an emulsion which is then sieved, thickened by heating, and finally filtered. The spraying liq. consists of 1 pt. of water with every 2 pts. of stock. USE/ADVANTAGE - Used in the prepn., packing, etc. of freshly-caught fish. Loss of appearance and taste are reduced, and the final prod. has a natural appearance and taste
