PURPOSE: To readily, effectively and continuously produce the subject high- quality fermented alcoholic beverage by using a bioreactor in which a fermentation solution circulates and controlling the fermentation by a specified method. ;CONSTITUTION: In fermenting while continuously supplying a fermentation raw material. to a bioreactor composed of a raw material supply-opening 1, an outlet pipe discharging a fermented alcoholic beverage and a ceramic filter module 3 formed into a loop shape by a circulation passage and capable of cross flow-filtering a fermented solution, distributing the clarified fermented solution into the outlet pipe and distributing the residual microorganism- containing fermented solution into the circulation passage, a suitable dilution ratio is selected using the specific gravity of the objective fermented solution as an indication. Specifically, a correlation between the cell concentration, the specific gravity of the raw material, the dilution ratio and the specific gravity of the fermented alcoholic beverage is determined in advance. The actual specific gravity of the raw material and the actual cell concentration in the bioreactor are subsequently measured.
