In order to obtain an effective servocontrol of the desired temperature with a cooking surface, when cooking for example by induction, a servocontrol curve is used in the plane (i.e., temperature, variation of the temperature as a function of time). Each time the curve is crossed the heating power is cut off or reduced. The device and method applies principally to monitoring of the heating device. The device according to the present invention is particularly well adapted to cooking surfaces and especially to cooking surfaces wherein cooking is done by induction.
