Apparatus for the maturing and feeding of curd for the dairy industry

The apparatus, designed particularly for the production of fibrous cheeses, consists of an elongated open tub (10) to be fed with curd and whey, and equipped with a perforated internal tub (28), hinged on one edge (14) of the tub to be operated with actuators (34, 36, 38); a shower channel (40), containing a screw feeder (26), flanked to the tub and lower; and one slide (52) hinged to one edge (42) of the channel and supported by the adjacent edge (14) of the tub. The apparatus can have other tubs similar to the first, place symmetrically with respect to the channel and with respective slides hinged to opposing edges of the channel. The screw in the channel ends at a cutting machine (60) to diminish the curd. Both the tubs and the channels can be equipped with washing units (24, 56).
