The invention relates to the field of foodstuffs; its subject is a milk which may or may not be decalcified and enriched with magnesium such as, for example, a milk which is decalcified by removal of 25 to 50% of the calcium originally contained in the milk by passing the latter over an ion exchange resin and subsequently adding magnesium in an amount ranging up to 1 g/l of Mg++. Application: Milks and milk products, such as yoghurts, enriched with magnesium.
