Native cereal enzyme extract, rich in protein and minerals and contg. the protein as insol. gluten and soluble protein from the cereal flour, is hydrolysed, alone or in admixture with a starch suspension in ratio of 1:1-10 wt.%, and a dry matter content of 5-42 wt.%, with moderate stirring and for 1-14h, with addn. of an alpha-amylase, a proteinase and simultaneous utilisation of the natural cereal beta-amylase present in the medium. Hydrolysis is at 45-67 deg.C and pH 4.5-6.0, to 45.50 dextrose equiv. units. USE/ADVANTAGE - A 1-stage process avoids starch liquefaction, and gives a shorter reaction time, 85-92 wt.% of the carbohydrate is maltose, 7-13% is a maltotriose and 1-3% is glucose. The hydrolysate is an additive for food compsns. and a raw material for biotechnological processe
