Fermentation plant for the production of vinegar comprising a vat (1) which makes it possible to convert, in the presence of microorganisms (Acetobacter), alcohol to acidic acid. It is characterised in that it comprises, mounted on a branch on the conduit (21) permitting the evacuation of the gases produced during the reaction, a unit (20) which makes it possible, on the one hand, to ensure the collection of a predetermined quantity of gas thus produced, and to carry out a measurement, in gaseous phase, of the content of alcohol which the said gas contains, thus making it possible to determine the ethanol concentration of the fermenting broth inside the vat.
