PURPOSE:To enable the reduction of a ketone or aldehyde which is insoluble or hardly soluble in water, in high conversion, by adding a triglyceride to a culture liquid. CONSTITUTION:A triglyceride is added to a culture liquid for the microbial reduction of a ketone or aldehyde of formula (R1 and R2 are H, 1-15C alkyl, alkoxy, aryl or aryloxy) which is insoluble or hardly soluble in water. Any triglyceride can be used provided that it is liquid at normal temperature and pressure, however, soybean oil or olive oil is most preferable. Various microbial strains such as Rhodotorula genus, Schizoxaccharomyces genus, etc., can be used in the present process.
