PURPOSE: To obtain a jam, made of an edible flower as a raw material holding a beautiful color and fragrance thereof without making an active ingredient possessed by the edible flower disappear and preservable for a long period. ;CONSTITUTION: A petal of an edible flower is finely pulverized and the resultant fine powder is successively mixed with adequate amounts of water, a gelling agent such as pectin, sugar and an organic acid, homogenized and prepared. The petal in the original form, as necessary, is subsequently added and the obtained mixture is hermetically sealed in an airtight container. The hermetically sealed mixture is then subjected to the high-pressure treatment at a temperature within the range of 5-35°C under about 2000-5000atm pressure for about 10-40min.;COPYRIGHT: (C)1994,JPO&Japio
