PURPOSE: To solve the problems of labor intensiveness, large waste water dis charge, low productivity and high environmental pollution in steaming and cooling processes and the problems of the preference for rather light taste and dislike for edible vinegar having molt odor or heavy taste. ;CONSTITUTION: Raw cereal or hydrated raw cereal is roasted.
