ABSTRACT OF THE DISCLOSUREDisclosed is a method for enhancing the thermalstability of microbial alpha-amylase. The methodinvolves adding a stabilizing amount of an amphiphileto the enzyme in its aqueous solution. Also includedwithin the scope of the invention is the stabilizedalpha-amylase formulation and its use in theliquefaction of starch.
