A method of eliminating polycyclic and/or aliphatic hydrocarbons from industrial effluents having a pH preferably higher than 5 is characterised in that at least one protein compound, preferably solubilised, is added to the industrial effluent and that the mixture obtained is precipitated by giving it an acid pH, and in that the precipitate is removed from the effluent.
