A method for preparing fish flesh which is generally known as Surimi comprises the following steps: (1) obtaining chopped fish flesh, (2) washing this flesh in water, (3) rinsing the washed flesh to obtain a pulp comprising at least 92 % water, (4) refining the wet pulp, (5) centrifugally decanting the refined pulp, without pressing it, to obtain a pulp comprising about 80 % water, (6) transforming the pulp into Surimi. The products obtained according to this method have low impurity, red muscle and connective tissue contents and therefore have an improved general appearance compared to conventional products. Furthermore, products obtained from fatty fish have a lower fat content.
