Prodn. of a food additive (partic. for flavouring) from a natural material (A) comprises first drying the material then milling it to powder. Pref. (A) is comminuted (to dice, slices, cubes etc.) before drying and is esp. of plant origin, e.g. temperate or tropical fruit, berries, vegetables, salads or their mixts. (A) is partic. air- or freeze-dried. USE/ADVANTAGE - The products are used to flavour baking mixts., powdered drinks, ice creams or frozen desserts, or as starting materials for pulps and purees. In partic. they are used in baby or diabetic foods. Flavours normally available only in synthetic form can be prepd. from natural products. The active flavour is not lost from the plant cells by drying, so its concn. in the dried material is high, but it is released by milling. Since sugars etc. present in (A) are retained in the dried product, addn. of extra sweeteners can be avoided or reduced. The dried products are storage stable.
