Spray-dried sugar or sugar substitutes are used in the prepn. of instant cocoa powders consisting of sugar or sugar substitutes, cocoa powder and opt. standard additives. The powders quickly dissolve in water or milk. Dissolution time is 3-8 times shorter than when using crystallised sugar or sugar substitutes. The powders retain all sensitive aroma materials of cocoa, are free-flowing, uniformly coloured and resist unmixing. All standard sugars may be used, partic. saccharose. Sugar substitutes include mannitol, xylitol and pref. sorbitol. Particle size is esp. 50-1500 (100-600) mu. Cocoa powder size is 100 (25) mu. Dusting can be prevented.
