Continuous evaporative crystallisation appts. has a vertical cell, subdivided by radial partitions into sections, through which material flows successively, each section being divided into an outer volume, which contains a heating element and in which the material circulates upwardly during crystallisation, and an inner volume, in which the material circulates downwardly for return into the lower region of the outer volume. The novelty is that the inner volume forms a vertical passage (22) of roughly circular cross-section and that at least the middle portions of the heating elements (20) in each section extend along concentric circular arcs, the centre points of which lie on the axis of the passage (22). USE/ADVANTAGE - Esp. for crystallisation of sugar. Thermal efficiency is improved by avoiding dead zones and by providing rational circulation of the material between the heating elements.
