The sensor for detecting and mesuring non-burned residues comprises two thermocouples (1, 30; 2, 28) electrically mounted in opposition, both their respective sensing portions being immersed in the same medium to be monitored. One of the thermocouples is a reference thermocouple while the other is a detecting and mesuring thermocouple having or generating a catalytic activity. The device is intended for manufacturers of heating equipment or engines and assemblies which produce outlet or exhaust gases.
