Unit for cooking, warming and cooling, continuously, consumable products, said unit being intended for the continuous cooking and cooling of a variety of products. It consists of a cooking unit comprising a thermal chamber (1) and a cooking chamber (2), and a powered belt (13) for the admission and discharging of the products into and out of the cooking chamber (2). This belt is made of flexible links which allow it to submerge the products in the cooking bath (25). A combined device (14) situated at the entrance and exit of the cooking chamber makes it possible, by means of guillotine doors (15) and powered jacks (16), to lower or raise the flexible belt (13) below the immersion bath (9) whilst simultaneously closing or opening the cooking chamber. The cooking unit, which comprises a system of refrigeration (26, 28, 29) and of ventilation (27), is identical to the cooking unit in that it is provided with the flexible belt (13) and combined device (14), with admission, immersion and discharging of the products.
