CONSTITUTION:Raw material rice is subjected to a macerating enzymatic treatment, a thermal treatment or both the treatments and subsequently pulverized by a conventional method, a gas flow pulverizing method or a pressing and gas flow pulverizing method to finely pulverize and modify the rice powder, thereby permitting to produce the product having a high quality having been not obtained and also to remarkably increase the demand of the rice because the product can be utilized as a raw material better than a substitute raw material for wheat flour.
