摘要

PURPOSE:To produce readily edible pickles of young melon having good appearance, uniform taste and good touch to the teeth and fresh feeling by floating and pickling young melons with branch containing vine part in a seasoning stock solution adjusted to proper pH. CONSTITUTION:Young melons having grown to about 5cm length are harvested in the state of the melons with branch containing vine by fruit thinning or exclusive culture not to damage epidermis as much as possible. Then the young melons with branch containing vine are carefully washed as they are in a large amount of water so as not to damage epidermis and floated and pickles in a barrel charged with a seasoning stock solution having =10% salt concentration and adjusted to pH =4.7, preferably about 4.7-5.0 in the ratio of raw material to the solution of 100-200% in a low-temperature atmosphere at 0-5 deg.C for about 4 days while maintaining the original form and not changing color.
