PURPOSE: To obtain a process for the processing of a jellyfish reconstituted with hot water, having uniform meat quality with bulkiness and chewability characteristic to jellyfish and suitable for mass-production and to obtain a jellyfish reconstituted with hot water and produced by this process. ;CONSTITUTION: Salted jellyfish 1 is sliced and the sliced jellyfish pieces 2 are immersed for 18-2 sec in hot water of 098°C in a boiling machine 13, etc., quickly cooled with ice water 15a in a cooling tank 15, desalted by washing with water by an agitator 16, etc., and immersed in an aqueous solution containing an organic acid and alcohol as solutes in an immersion tank 18. The hot-water reconstituted jellyfish produced by this process is reconstituted and desalted by uniform heating, contains 0.1-0.005wt.% of an organic acid and 2-0.5wt.% of alcohol, has bulkiness and chewability and is eatable as it is.;COPYRIGHT: (C)1995,JPO
