PURPOSE: To obtain a large amount of trehalose from brewery cake by extracting a brewery cake separated in the brewing process of a brewed liquor or brewed food and purifying the extracted component. ;CONSTITUTION: A component containing trehalose is extracted from a brewery cake by heat-treating the cake under extraction by conventional extraction process including heat-refluxing with alcohol, ultrasonic disintegration, etc. Trehalase present in the brewery cake is deactivated by the heat-treatment. The component containing trehalose is purified by a purification process including enzymatic treatment, active carbon treatment, ion exchange resin treatment, etc. Trehalose can be produced in high yield by this process.;COPYRIGHT: (C)1995,JPO
