The present invention concerns a process for the preparation of meat fillings for tortellini, ravioli or other stuffed fresh pasta. The process, which takes place in a sterile environment, comprises the following operations: - a first stage of trituration of frozen meat, together with salted meats and vegetables, to form pieces or flakes about 1 cm3 in size; - a second stage of mixing when the product is homogeneously mixed and combined with spices and bread crumbs; - a third stage of grinding when the product is converted into the form of minced meat; - and a fourth stage of kneading when the product is kneaded with cheese and more bread crumbs. All the stages of the process take place in a sterile environment.
