PURPOSE: To provide a method for storing fresh yams so as to prevent browning and a method for producing a fresh yam frozen food. ;CONSTITUTION: This method for storing fresh yams comprises cutting and removing the surface part including epidermis up to 1-8mm depth from the surface, bringing the surface of the yarn into contact with a liquid heated to ≥70°C to thermally change the property of only surface part and retaining the temperature of the cut product to a temperature lower than 0°C. This method for producing a yam frozen product comprises cutting and removing the surface part including the epidermis up to 1-8mm depth from the surface, bringing the surface of the resultant surface part cut product of fresh yam into contact with a liquid heated to ≥70°C and thermally changing the property of only surface part and freezing the treated yam.;COPYRIGHT: (C)1996,JPO
