PURPOSE: To produce the subject product resembling human breast milk in composition by lowering the content of a protein component having low histidine content, thereby enriching histidine in the form of protein having excellent palatability and bioavailability without using individual crystalline amino acids. ;CONSTITUTION: This nursing dairy product contains a cow's milk protein as a constituent protein. The histidine content based on total amino acid is adjusted to ≥2.5% by lowering the ratio of protein components having a histidine content of ≤1.6% based on the total amino acids. Preferably, the product is produced by using casein and a whey protein as the constituent proteins and removing β-lactoglobulin from the whey protein and/or enriching the α-lactoalbumin component to an extent to satisfy the formula wherein (x)% is constitution ratio of casein to the total protein and R is the weight ratio of (α-lactoalbumin component)/(β-lactoglobulin).;COPYRIGHT: (C)1996,JPO
