PURPOSE: To provide a method for determination/activity measurement of a very small amount of proteinase A, for example, in beer and to obtain a substrate useful for the method. ;CONSTITUTION: An octapeptide derivative of the formula PG-A3-A4-A5-A5-Phe- Phe-Arg-Leu-FlG [PG shows an amino group-protecting group; A3, A4, A5 and A6 are each an amino acid shown by Ala, Asp, Lys, Leu, Arg, Ser or Pro; FlG shows a fluorescent group such as 4-methylcoumaryl-7-amide (MCA)]. This method for measuring proteinase A activity and foam stability of beer uses a nanapeptide derivative of the formula fg-A3-A4-A5-A6-Phe-Phe-Arg-Leu-Lys(Dnp)-NH2 [fg is a fluorescent group of (7-methoxycoumarin-4-yl)acetyl (MOCAc) group or anthraniloylbenzyl (ABz) group; A3, A4, A5 and A6 are each independently an amino acid shown by Ala, Asp, Lys, Leu, Arg, Ser or Pro; (Dnp) is dinitrophenyl group].;COPYRIGHT: (C)1996,JPO
