PURPOSE:To inexpensively prepare a dry grated Japanese radish capable of being recovered into the grated Japanese radish having natural taste and flavor by the addition of water by separating the grated Japanese radish into a solid fraction and a liquid fraction, concentrating the liquid fraction at a low temperature and again mixing the concentrated liquid fraction with the solid fraction. CONSTITUTION:A grated Japanese radish is separated into a solid fraction and a liquid fraction, and the liquid fraction is concentrated at a low material temperature of =60 deg.C. The concentrated liquid fraction is again mixed with the solid fraction, frozen and lyophilized to prepare a dry grated Japanese radish.
