PURPOSE: To enhance the usability and expand the range of application of NATTOU (fermented soybean) by separating NATTOU as a starting material into a viscous material and the remaining NATTOU in which the viscous material is removed and using each of the separated components as food in various kinds of application forms or as a raw material for various kinds of foods. ;CONSTITUTION: NATTOU as a starting material is added with water and sufficiently stirred with a stirrer. A viscous material existing on the surface of NATTOU is dissolved into water and beans of the main body of NATTOU are filtered with a filter consisting of a metallic net, etc., having fine mesh. Thus, viscous material-free NATTOU, in which the viscous material on the surface has been removed, and a viscous material-containing aqueous solution are separated from each other. The viscous material-free NATTOU is used as a food having a pastry application form as it is or a various kinds of dried material, pulverized material, etc. On the other hand, the viscous material is used as spawn, a raw material for a brewing product, a pastry product, a subsidiary material for producing food, a nutrient agent, etc., in an aqueous solution as it is or after converting into an application form such as condensed solution, dried material, pulverized material or formed article.;COPYRIGHT: (C)1996,JPO
