The invented process during which a foodstuff is extruded by an extrusion device and after extrusion it is cut off by a cutting device, whereby the extruded material (11) of the foodstuff is sprayed after leaving the extrusion nozzle (2) and prior cutting off with at least one auxiliary material is characterized in that the auxiliary material is sprayed onto the extruded material (11) at a frequency of 500 to 20 000 Hz. The corresponding apparatus for making the process comprises an extruder screw for feeding the foodstuff extruded material (11) that is extruded through an extrusion nozzle (2) and after extrusion it is cut off by a cutting device, whereby prior cutting off the extruded material (11) at least one auxiliary material is sprayed onto this extruded material (11) by means of at least one spraying apparatus (7). The spraying apparatus (7) is formed by a pressure head (8) and for synchronization it is interconnected with the extruder screw and/or the cutting device.
