The invention relates to a cooking installation for deep-frozen pre-cooked French fries, characterised in that it comprises a silo (2) from which the French fries can be delivered to a first basket (11) forming part of a balance (8), the silo (2) and the balance (8) being arranged in a chamber (1) where a deep-freezing temperature prevails, a current of cold air being maintained in the said chamber and made to circulate over an evaporator (froster) (16) of a refrigerator device arranged in this chamber in order to cause the desiccation of the air and thus the defrosting of the French fries.
