Bacteriocin produced by lactic acid bacteria is bacteriocin, which has a narrow range of bacteria that act only on closely related species, and bacteriocin, which has a wide range of antimicrobial activity that acts as an antimicrobial agent to bacteria belonging to another genus.;Some bacteriocins containing nisin are stable at low pH and well soluble in water, but are unstable at pH 4.0 and above and difficult to dissolve in water.;The present invention relates to a bacteriocin polypeptide produced by Lactococcus sp. HY49 (strain No. KFCC-10842, deposited on Sep. 2, 1994 by the same applicant, Patent Application No. 94-22715) Quot; refers to a polypeptide whose N-terminus begins with isoleucine and is composed of 34 amino acids. The present invention also relates to a method for separating and purifying the polypeptide.;The bacteriocin according to the present invention exhibits a broader antibacterial activity than the conventional bacteriocin, and shows a considerable inhibitory effect on Lactobacillus perfume IFO 3023.;Further, the bacteriocin according to the present invention is stable in a wide pH range and heat, is maintained in its activity, is well dissolved at a neutral pH, and is highly applicable to foods.
