Non-sulfato-reducing strict anaerobic thermophilic and hyperthermophilic bacteria culture method for the production of metabolites, in particular enzymes. A culture medium is used in strict anaerobiosis conditions, in the absence of an external hydrogen supply, said culture medium containing at least 1 g/l of a peptidic and/or amino acid source, at least one sugar and thiosulfate as the growth stimulating agent.
