Microfibrillated cellulose characterized in that it contains at least about 80% of primary walls and in that it is loaded with carboxylic acids, and its process for obtaining, in particular, from sugar beet pulp, said process being characterized by BR/ - a moderate heating at 60-100 deg.C suspended pulp; BR/ - an extraction of the cellulosic material with a base whose concentration is less than 9% by weight; BR/ homogenization of the cellulosic residue by mixing or grinding or any high mechanical shearing operation, followed by passage of the cell suspension through a small diameter orifice, subjecting the suspension to a pressure drop of at least 20 MPa and to a shearing action at high speed followed by a deceleration impact at high speed. BR/ The cellulose of the invention is remarkable, in particular in that it can easily be resuspended in a controlled manner. is dehydrated.
