According to the method of the invention, an extract of polyphenolic compounds, derived from a plant material of a plant species or one of its hybrids or their lower rank taxa, or from an elaborated product, is subjected to from this material, to at least one multidimensional NMR analysis, followed by a quantitative analysis of the signals and the statistical processing of the integration data, leading to the obtaining of characteristic data of the plant species, of the hybrid and lower rank taxa. Application to the identification of a plant species of its hybrids or lower rank taxa and use for purposes of control of their origin.
