PROBLEM TO BE SOLVED: To obtain a fried food of a sliced garlic suitable for eating a large amount thereof to some extent by using the large-sized garlic. ;SOLUTION: A large-sized garlic having ≥20g weight of a bulb and ≤1mg/g, typically ≤0.5mg/g ratio of allicin content is used. The method for producing the fried food of sliced garlic comprises a step for slicing the garlic to 0.5-20.0mm thickness, a step for heat-treating the sliced garlic at 90-100°C for 30sec to 5min, a step for applying an outer coating or powder for the fried food to the heat-treated garlic and a step for frying the garlic having the outer coating or powder applied thereto in an oil.;COPYRIGHT: (C)1997,JPO
