PROBLEM TO BE SOLVED: To determine/measure an Amadori compound in a simple optical method utilizing scattering of light. ;SOLUTION: An excitation light is cast from an He-Ne laser 1 to a sample including an Amadori compound in a cell 3. A scattering light from the sample is detected and dispersed thereby to obtain a light-scattering spectrum. A scattering peak existing in a shift wave number to an excitation wavelength of 820-840cm-1, 1655-1660cm-1, 2000-2020cm-1, 2080-2100cm-1, 2460-2470cm-1 or 2530-2600cm-1 is detected among the spectrum by a detector 23. A concentration of saccharide or a sacharification rate of the compound is measured from a working curve with using a peak intensity or peak integrated value of the peak.;COPYRIGHT: (C)1997,JPO
