摘要

PURPOSE: To obtain a protease having an optimum active temperature at a low-temperature region and hardly inhibited even by various kinds of surfactants. ;CONSTITUTION: This is a protease of optimum low-temperature having the following enzymatic characteristics. 1. Active temperature and optimum temperature: It is active at 0-60°C and the optimum temperature is between 25-30°C. When Ca2+ ion coexists, the optimum temperature increases to 50°C. About 20-30% of the activity at the optimum temperature is kept even at 0°C (in a ice-water). 2. Temperature stability: The stability is kept up to 40°C under a treating condition of pH 7.0 and 15min. When Ca2+ ion coexists, it is stable up to 50°C. 3. Active pH and optimum pH: It is active at pH 5-10. The optimum pH is about 7.0. 4. pH stability: It is stable at a pH value of pH 5.8-9.8 under a treating condition of 20°C and 15min.;COPYRIGHT: (C)1996,JPO
